Meatloaf Muffins

Makes 12 Muffins

Ingredients:

1 tsp olive oil
-
1 cup minced onions
-
½ cup finely chopped carrots
-
1 tsp dried oregano
-
2 garlic cloves minced
-
1 cup ketchup divided
-
1½ pounds ground turkey or extra lean beef
-
1 cup finely crushed fat free saltine crackers (about 20)

2 Tbl prepared mustard
-
1 tsp Worcestershire sauce
-
¼ tsp freshly ground black pepper

2 large eggs

Cooking spray
Directions:

Preheat oven to 350° F.

Heat the oil in a non stick skillet over medium-high heat.

Sauté the onions, carrots, oregano and garlic for 2 minutes.

Combine ½ cup ketchup and the remaining ingredients in a large bowl except for the cooking spray, add the vegetable mixture and combine.

Coat twelve muffin cups with cooking spray.

Spoon the meat mixture into the muffin cups.
-
Top each meat loaf with 2 tsp ketchup.

Bake for about 25- to 30-minutes or until a thermometer registers 160° F.
