Split Pea Soup

Ingredients
- 1 pound dry green split peas
- 1 or 2 cubes of Knorr Vegetable Bouillon
- 8 cups of water
Directions:
- Bring to boil and reduce to simmer.
- Cook until desired consistency. I personally like it creamy and smooth which takes 1½ to 2 hours (and reduces the finished volume to about 6 cups). If you like the peas more intact a half hour or so may be about right.

- (Soy) Bacon bits: ½ Tbl. = 12 calories

NOTE: I often serve whole grain toast with soup (for instance dusted with garlic powder and ½ Tbl. of parmesan cheese then broiled).
