Trader Joe's Fish Nuggets
& Brown Jasmine Rice

Trader Joe's battered Fish Nuggets are a great option for an "emergency meal." I usually keep a box on hand for nights where the day got away from me, and or I don't have the energy to deal with cooking! (Yes it happens to all of us!)
We routinely keep our rice cooker going as my husband uses rice for his lunch most days and our son likes rice for breakfast and snacks. Needless to say we go through a lot of rice; I mostly vary it up between brown and regular jasmine and basmati. Fortunately we're 5-minutes from the best Asian market in the Seattle area (Uwajimaya) with more rice options than I know what to do with!
To round out the meal add a side salad, or side of vegetables. I keep a variety of frozen vegetables on hand for these occaisions (we easily eat a full bag). Trader Joe's also has several great options for mixed frozen veggies (as does any grocer). Another option is putting cherry tomatoes, baby carrots, and celery sticks, on the table for everybody to munch on.
Cooking directions: Preheat oven to 475 degrees F. Bake fish nuggets for 15 to 18-minutes on a greased baking sheet. Turn nuggets half way through bake time for best results.
